A list of vegetables I can safely eat, straight from my dietitian…

Leafy greens

One serving equals 1 cup, and generally contains 25 calories and 0g of fat.

  • Arugula
  • Bibb
  • Endive
  • Escarole
  • Red or green leaf
  • Romaine
  • Spinach

Green vegetables and other vegetables

One serving equals 1/2 cup, and generally contains 25 calories and 0g of fat.

  • Artichoke
  • Asparagus
  • Bean sprouts
  • Bell peppers
  • Broccoli
  • Brussels sprouts
  • Cabbage
  • Carrots
  • Cauliflower
  • Celery
  • Collard greens
  • Cucumber
  • Edamame (I asked, but it’s more of a protein than a vegetable, apparently)
  • Eggplant
  • Garlic
  • Green beans
  • Hot peppers
  • Jicama
  • Kale
  • Leeks
  • Mushrooms
  • Mustard greens
  • Onions
  • Peas
  • Radishes
  • Scallions
  • Snow peas
  • Sugar snap peas
  • Swiss chard

  • Water chestnuts

I need to avoid juices, corn, potatoes, yams, sweet potatoes, and winter squash because they are high glycemic.

I need to include at least 1 serving of a high fiber vegetable each day.
