Roasted Cauliflower with Rosemary and Garlic

Recipe from 1,000 Lowfat Recipes by Terry Blonder Golson.
Ingredients
- 1 large head cauliflower, cut into florets, stem discarded
- 3 Tablespoons water
- 1 Tablespoon olive oil
- 3 cloves garlic, crushed
- 1 teaspoon dried rosemary, or 1 Tablespoon fresh rosemary
- 1/2 teaspoon kosher salt (optional)
Preparation
- Preheat oven to 450 degrees F.
- Toss together all of the ingredients in a shallow casserole or rimmed baking sheet.
- Place in the center of the oven and bake for 15 minutes. Stir and continue to bake, about 15 minutes longer, until the cauliflower is tender and brown in spots.
