Roasted Cauliflower with Rosemary and Garlic

Recipe from 1,000 Lowfat Recipes by Terry Blonder Golson.

Ingredients

  • 1 large head cauliflower, cut into florets, stem discarded
  • 3 Tablespoons water
  • 1 Tablespoon olive oil
  • 3 cloves garlic, crushed
  • 1 teaspoon dried rosemary, or 1 Tablespoon fresh rosemary
  • 1/2 teaspoon kosher salt (optional)

Preparation

  1. Preheat oven to 450 degrees F.
  2. Toss together all of the ingredients in a shallow casserole or rimmed baking sheet.
  3. Place in the center of the oven and bake for 15 minutes. Stir and continue to bake, about 15 minutes longer, until the cauliflower is tender and brown in spots.

Serves 6.
