Mashed Cauliflower

This recipe resembles mashed potatoes, but is much healthier.

Ingredients

  • 1 medium head cauliflower
  • 4 cloves garlic (quantity optional)
  • 1-2 teaspoons horseradish
  • 1-2 Tablespoons low fat sour cream

Preparation

Boil cauliflower with garlic in medium saucepan. Once cooked, place in blender with horseradish and sour cream. Blend to desired consistency.

Servings

Makes 6 1/2 cup (approximate) servings.

Calories 37; protein 2.3g; fat 1g; carbohydrates 6g; fiber 2.5g; sodium 38mg.
