Very Green Beans

Recipe adapted from Great Good Food by Julee Rosso.

Parsley seems to make green beans taste even better!

Ingredients

  • 1 pound green beans, trimmed
  • 2 teaspoons olive oil
  • 1/2 cup finely chopped Italian flat-leaf parsley
  • Salt and freshly ground pepper

Preparation

Steam the beans over boiling water in a covered pot for 5-6 minutes, until tender but still crisp. Drain and toss with the olive oil, parsley and salt and pepper to taste. Serve immediately.

Serves 4.
