Super-Quick Dinner Salad

The beauty of this salad is that all of the ingredients are optional—use prewashed lettuce as your base, and add whatever vegetables you like. It can be used as a side salad, or you can add several additional chopped vegetables, along with leftover fish, chicken, or shrimp, and make it a meal.

Ingredients

  • 1 bag prewashed mixed salad greens or baby spinach
  • 2 Tablespoons chopped green or red onions
  • 1/2 cup Roma, cherry or other in-season tomato, chopped
  • 1/4 cup Paul Newman’s Balsamic Vinaigrette Dressing

Preparation

Place the salad greens, chopped onion and tomatoes in a large salad bowl (along with optional ingredients below, if desired). Drizzle vinaigrette dressing on top and toss lightly. Top it off with fresh ground pepper, if desired.

Serves 4.

Optional ingredients

  • 1 16-oz can artichoke hearts in water, drained and cut into quarters
  • Red bell pepper, cut into strips
  • Grated carrot or red cabbage
  • Sliced radishes
  • Cucumber, peeled, seeded and sliced
  • 2 Tablesppons grated Parmesan cheese
  • 8oz leftover cooked salmon, chicken or shrimp
