Sunny Millet with Peaches

Recipe from Feeding the Whole Family by Cynthia Lair.

Serving suggestion: add plain, low fat yogurt and 1/2 cup berries to round out this breakfast meal.

Ingredients

  • 3/4 cup millet
  • 1 peach (or other seasonal fruit), sliced
  • 2 cups water
  • a pinch of sea salt

Preparation

Place millet in a fine strainer, rinse and drain. Combine millet, fruit, water and salt in a 2qt saucepan and bring to a boil. Cover and simmer on low for 20-25 minutes, or until all water is absorbed. Serve in bowl with dollops of yogurt on top.

Nutritional information

Makes 4 servings, each having 160 calories, 4g protein, 1.5g fat, 33g carbohydrates, 4g fiber and 90mg sodium.
