Rolled or Steel-Cut Oats

Recipe from Feeding the Whole Family by Cynthia Lair.

Oat groats that have been thinly sliced are called stell-cut oats. Oat groats that have been heated until soft and pressed flat are called rolled oats.

Ingredients

  • 1 cup rolled or steel-cut oats
  • a pinch of sea salt
  • 3 cups water
  • 1/2 tsp cinnamon (optional)

Preparation

Place oats in a pot with salt and water. Bring to a boil, reduce heat, cover and let simmer on low for 20-25 minutes (steel-cut oats will take 25-30 minutes). Add cinnamon during the last 10 minutes of cooking, if desired.

Nutrtional information

Makes six 1/2 cup servings, each having 110 calories, 4g protein, 2g fat, 19g carbohydrates, 3g fiber and 60mg sodium.
