Basic Millet

Millet is a small, round, yellow grain that is one of the oldest foods known to humans; it is also one the least allergenic grains. It is still a staple food in parts of Africa. Millet has a sweet, earthy tast that is enriched by dry-toasting the grain before cooking.

Ingredients

  • 1 cup millet
  • 2-3 cups water
  • a pinch of sea salt

Preparation

Wash millet and drain. Repeat the rinsing 2-3 times. Place millet in a pan and dry-toast it for a richer flavor (this is optional). Heat the washed grain in a pot or skillet, stirring constantly until it is toasted dry and gives off a nutty aroma, about 5-7 minutes. Add water to toasted millet (use 2 cups water for a fluffy grain, 3 cups for a creamier grain). Bring water, millet and a pinch of salt to boil, lower heat, cover and simmer 30-40 minutes, until all the water is absorbed.

Makes six 1/2 cup servings, each having 130 calories, 4g protein, 1.5g fat, 24g carbohydrates, 3g fiber, 0mg sodium and 0mg cholesterol.
