Bulgar Tuna Tabouli

Recipe from Cooking Light.

Ingredients

  • 1 cup bulgar wheat
  • 1-1/2 cups boiling water
  • 1 cup mint leaves or parsley, finely chopped
  • 1 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 2 ribs of celery, finely chopped
  • 4 scallions, thinly sliced
  • 1 can albacore tuna, unsalted, in water

Preparation

  1. Place bulgar wheat in a large mixing bowl.
  2. Add boiling water and cover for 30 minutes.
  3. Add remaining ingredients and refridgerate for at least an hour.
  4. Evenly divide tabouli into 4 servings and serve on lettuce leaf.

Nutritional information

Makes 4 servings, each having 230 calories, 16g protein, 5g fat, 31g carbohydrates, 8g fiber, 200mg sodium and 20mg cholesterol.
