Bulgar Tuna Tabouli

Recipe from Cooking Light.
Ingredients
- 1 cup bulgar wheat
- 1-1/2 cups boiling water
- 1 cup mint leaves or parsley, finely chopped
- 1 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 2 ribs of celery, finely chopped
- 4 scallions, thinly sliced
- 1 can albacore tuna, unsalted, in water
Preparation
- Place bulgar wheat in a large mixing bowl.
- Add boiling water and cover for 30 minutes.
- Add remaining ingredients and refridgerate for at least an hour.
- Evenly divide tabouli into 4 servings and serve on lettuce leaf.
Nutritional information
Makes 4 servings, each having 230 calories, 16g protein, 5g fat, 31g carbohydrates, 8g fiber, 200mg sodium and 20mg cholesterol.
