Quinoa

Quinoa (pronounced keen-wah) is a plant that originated in the Andes region of South America. It is very easy and quick to cook. The cooked seeds have a unique sprout-like appearance and a light but flavorful taste. It is higher in calories and protein than most other grains. Cooked quinoa is great with vegetables, casseroles and seafood.

Ingredients

  • 1 cup quinoa
  • a pinch of sea salt
  • 1-3/4 cups water

Preparation

  1. Rinse quinoa well with warm water and drain. Quinoa has a natural coating called saponin that repels insects and birds. Rinsing with warm water removes saponin which can create a bitter taste.
  2. Place rinsed quinoa, salt and water in a pot. Bring to a boil, reduce heat to low, cover and let simmer for 15-20 minutes, until all the water is absorbed. Fluff with a fork before serving.

Nutritional information

Makes six 1/2 cup servings, each having 100 calories, 4g protein, 1.5g fat, 20g carbohydrates, 2g fiber and 65mg sodium.
