Curried Couscous

Recipe from Cooking Light.

For a balanced meal, try serving this with baked chicken breasts and oven roasted broccoli or cauliflower.

Ingredients

  • 1 tsp olive oil
  • 1/4 tsp curry powder
  • 1/8 tsp ground allspice
  • 1-1/3 cups fat free, low-sodium chicken broth
  • 2/3 cup uncooked whole wheat couscous

Preparation

Over medium heat, place olive oil, curry and allspice in medium saucepan. Cook 1 minute, stirring constantly. Add broth, bring to a boil Stir in couscous. Remove from heat, cover and let stand 5 minutes. Fluff with a fork.

Nutritional information

Makes 2 servings, each having 200 calories, 8g protein, 5g fat, 36g carbohydrates, 6g fiber and 344mg sodium.
