Minted Couscous

Recipe from Cooking Light.

For a balanced meal, try serving with grilled tuna steaks and a side vegetable such as grilled asparagus spears or tossed green salad.

Ingredients

  • 3/4 cup water
  • 1/2 tsp olive oil
  • a pinch of sea salt
  • 2/3 cip whole wheat uncooked couscous
  • 1 Tbsp fresh mint, chopped

Preparation

Bring water, oil and salt to a boil in a medium saucepan, and gradually stir in couscous. Remove from heat, cover and let stand 5 minutes. Fluff with a fork and stir in the mint.

Nutritional information

Makes 2 servings, each having 225 calories, 7g protein, 1g fat, 45g carbohydrates, 6g fiber and 308mg sodium.
