Whole Wheat Couscous

Recipe from Feeding the Whole Family by Cynthia Lair.
Couscous is actually a tiny pasta made from coursely ground and steamed wheat. It is usually made from refined grain, although whole wheat couscous is becoming more widely available. Couscous can be used as a base grain for brans and stews and it also makes a nice salad when fresh vegetables and a dressing are added to the cooked grain.
Ingredients
- 1 cup water
- a pinch of sea salt
- 1 cup whole wheat couscous
Preparation
Bring water and salt to a boil. Add couscous. Cover pan and remove from heat. Let stand 5-10 minutes. Fluff grain with a fork before serving. If desired, stir in a few drops of oil to keep the couscous from clumping.
Nutritional information
Makes six 1/2 cup servings, each having 140 calories, 5g protein, 0.5g fat, 30g carbohydrates, 5g fiber and 60mg sodium.
