Spicy Chicken

Recipe adapted from Great Good Food by Julee Rosso.

Note: this recipe requires advance preparation. It is super simple, requiring only one pot and only 5-10 minutes of preparation time, but it does require at least an hour to simmer on the stove top.

Ingredients

  • 1-1/3 pounds boneless, skinless chicken breasts
  • 3 cups non fat, low-sodium chicken broth
  • 1/4 tsp Tabasco sauce
  • 1/2 tsp chili powder
  • 1 Tbsp crushed red pepper flakes
  • 1 tsp paprika
  • 1 Tbsp seeded and minced jalapeno pepper (optional)

Preparation

  1. In a large stockpot, combine all of the ingredients and bring to a boil for 5 minutes. Reduce the heat to low, cover and simmer for 40 minutes. Uncover and simmer for 20 minutes.
  2. Remove the pot from the heat and set aside for 1 hour. Remove the chicken and shred.

Nutritional information

Makes 4 servings, each having 190 calories, 39g protein, 2g fat, 1g carbohydrate, 0g fiber and 230 mg sodium.
