Posted May 13, 2006 at 12:25 PM
Recipe adapted from Great Good Food by Julee Rosso.
Note: this recipe requires advance preparation. It is super simple, requiring only one pot and only 5-10 minutes of preparation time, but it does require at least an hour to simmer on the stove top.
Ingredients
- 1-1/3 pounds boneless, skinless chicken breasts
- 3 cups non fat, low-sodium chicken broth
- 1/4 tsp Tabasco sauce
- 1/2 tsp chili powder
- 1 Tbsp crushed red pepper flakes
- 1 tsp paprika
- 1 Tbsp seeded and minced jalapeno pepper (optional)
Preparation
- In a large stockpot, combine all of the ingredients and bring to a boil for 5 minutes. Reduce the heat to low, cover and simmer for 40 minutes. Uncover and simmer for 20 minutes.
- Remove the pot from the heat and set aside for 1 hour. Remove the chicken and shred.
