Grilled Salmon with Mustard Sauce

Recipe from Cooking Light.

Ingredients

  • 4 salmon fillets, about 6oz each
  • 1 lemon, cut in half
  • freshly ground pepper

Sauce

  • 1/2 cup Dijon mustard
  • 1 tsp olive oil
  • 3 Tbsp fresh dill, chopped or 1 Tbsp dried dill
  • 1 handful fresh basil, chopped

Preparation

  1. Rinse fillets under cold running water and pat them dry. Squeeze the juice from half of the lemon over the fillets, then season them with pepper.
  2. Preheat grill or broiler.
  3. Meanwhile, prepare the sauce: whisk together the mustard, olive oil and dill in a small bowl. Add the basil and the juice from the other half of the lemon, mixing well.
  4. Grill the fish on high heat or broil until desired doneness, but do not overcook.
  5. Spoon sace over the fish and serve immediately.

Makes 4 servings, each having 236 calories, 36g protein, 8.5g fat, 3g carbohydrates and 88mg cholesterol.
