Fruit Salad with Yogurt and Mint Sauce

Recipe from 1,000 Lowfat Recipes by Terry Blonder Golson.

Note: the grapefruit, melon and orange can be prepared a day ahead of time, but add the berries and dress the salad just prior to serving.

Ingredients

  • 1 grapefruit
  • 1 2-3 pound melon, scooped into balls
  • 1 orange, segments removed from the membranes
  • 1 pint berries
  • 2 cups Cascade Fresh non fat or low fat vanilla yogurt
  • 2 Tbsp minced fresh mint

Preparation

  1. Cut the grapefruit in half and scoop out the segments. Put the segments into a bowl. Squeeze the juice from the grapefruit into the bowl.
  2. Add the melon, orange segments and berries. Toss and chill.
  3. Whisk together the yogurt and mint. Combine with the chilled fruit and serve.

Nutritional information

Makes 8 servings, each having 90 calories, 3g protein, 0g fat, 20g carbohydrates, 2g fiber and 45mg sodium.
