Asian Asparagus and Orange Salad

Recipe from the 20/20 Lifestyles Program at the Pro Sports Club.

Ingredients

  • 1 orange
  • 1/2 Tbsp olive oil
  • 3 cups diagonally-sliced asparagus (about 1 pound)
  • 1 small garlic clove, thinly sliced
  • 1 tsp low-sodium soy sauce
  • 1/8 tsp dark sesame oil
  • 1/2 Tbsp sesame seeds, toasted
  • Napa cabbage leaves (Chinese cabbage) – optional

Preparation

  1. Peel and section orange over a bowl, reserving 1 tsp juice. Set sections aside, discard membranes.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add asparagus and garlic, saute 5 minutes. Remove from pan.
  4. Combine soy sauce and sesame oil, pour over asparagus mixture, tossing well.
  5. Cool to room temperature.
  6. Stir in sesame seeds, orange sections and 1 tsp juice.
  7. Serve on cabbage leaves, if desired.

Nutritional information

Makes five 1/2 cup servings, each having 46 calories, 2.2g protein and 2.1g fat.
