Slow-Cook White Chili

Recipe from the 20/20 Lifestyles Program at the Pro Sports Club.

Ingredients

  • 2 15oz cans great northern beans, drained
  • 20oz cooked and shredded chicken breasts
  • 1 cup onions
  • 1-1/2 cups chopped yellow, red or green bell peppers
  • 2 garlic cloves, minced
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 3-1/2 cups non fat chicken broth (2 14oz cans)
  • Cayenne pepper
  • Sour cream, light
  • Mozzarella cheese

Preparation

  1. Combine all ingredients except cayenne pepper, sour cream and cheese in a slow cooker.
  2. Cover. Cook on low 8-10 hours or on high 4-5 hours.
  3. Add cayenne pepper. Stir. Ladle into bowls and top individual servings with 1/4 cup shredded mozarella and 1 Tbsp light sour cream.

Nutritional information

Makes 6 servings, each having 360 calories, 43g protein, 4.5g fat, 35g carbohydrate, 8g fiber, 75mg cholesterol and 380mg sodium.
