Crab Salad with White Beans and Gourmet Greens

Recipe from the 20/20 Lifestyles Program at the Pro Sports Club.

Ingredients

  • 1/3 cup chopped yellow bell pepper
  • 1/3 cup chopped red onion
  • 1/4 cup chopped celery
  • 2 Tbsp white wine vinegar
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp hot chili sauce
  • 2 6oz cans lump crab meat, drained; or 12oz fresh cooked crab meat
  • 1 16oz can cannelloni beans or other white beans, rinsed and drained
  • 6 cups torn gourmet salad greens

Preparation

  1. Combine everything but the salad greens and toss gently.
  2. Cover and chill for 20 minutes.
  3. Serve over the salad greens.

Nutritional information

Makes 6 servings, each having 180 calories, 19g protein, 4g fat, 20g carbohydrate, 5g fiber and 300mg sodium
