Crab Salad with White Beans and Gourmet Greens

Recipe from the 20/20 Lifestyles Program at the Pro Sports Club.
Ingredients
- 1/3 cup chopped yellow bell pepper
- 1/3 cup chopped red onion
- 1/4 cup chopped celery
- 2 Tbsp white wine vinegar
- 1 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp hot chili sauce
- 2 6oz cans lump crab meat, drained; or 12oz fresh cooked crab meat
- 1 16oz can cannelloni beans or other white beans, rinsed and drained
- 6 cups torn gourmet salad greens
Preparation
- Combine everything but the salad greens and toss gently.
- Cover and chill for 20 minutes.
- Serve over the salad greens.

Makes 6 servings, each having 180 calories, 19g protein, 4g fat, 20g carbohydrate, 5g fiber and 300mg sodium
