Marinated Balsamic Bean Salad

Recipe from the 20/20 Lifestyles Program at the Pro Sports Club.
Ingredients
- 1 cup frozen cut green beans
- 1 16oz can kidney beans
- 1 15oz can garbanzo beans (chickpeas)
- 1 15oz can black beans
- 1 cup diced red onion
- 1/2 cup balsamic vinegar
- 1/4 cup water
- 2 Tbsp Dijon mustard
- 1 Tbsp olive oil
- 1 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp ground white pepper
- 2 garlic cloves, minced
Preparation
- Combine all of the beans in a colander; rinse and drain.
- Combine onion and remaining ingredients in a bowl. Add the bean mixture, tossing gently to coat.
- Cover and marinate in the refridgerator at least 4 hours, stirring occassionally.
- Serve with a slotted spoon.
Nutritional information
Makes 7 servings, each having 210 calories, 11g protein, 4g fat, 37g carbohydrate, 12g fiber and 620mg sodium.
