Marinated Balsamic Bean Salad

Recipe from the 20/20 Lifestyles Program at the Pro Sports Club.

Ingredients

  • 1 cup frozen cut green beans
  • 1 16oz can kidney beans
  • 1 15oz can garbanzo beans (chickpeas)
  • 1 15oz can black beans
  • 1 cup diced red onion
  • 1/2 cup balsamic vinegar
  • 1/4 cup water
  • 2 Tbsp Dijon mustard
  • 1 Tbsp olive oil
  • 1 tsp dried thyme
  • 1/4 tsp salt
  • 1/4 tsp ground white pepper
  • 2 garlic cloves, minced

Preparation

  1. Combine all of the beans in a colander; rinse and drain.
  2. Combine onion and remaining ingredients in a bowl. Add the bean mixture, tossing gently to coat.
  3. Cover and marinate in the refridgerator at least 4 hours, stirring occassionally.
  4. Serve with a slotted spoon.

Nutritional information

Makes 7 servings, each having 210 calories, 11g protein, 4g fat, 37g carbohydrate, 12g fiber and 620mg sodium.
