Roasted Pepper and Chickpea Salad

Recipe from the 20/20 Lifestyles Program at the Pro Sports Club.
Ingredients
- 1/2 cup vertically sliced red onion
- 1/3 cup minced fresh cilantro
- 2 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 1/2 tsp Hungarian sweet paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 3 red bell peppers, roasted, peeled and cut into thin strips
- 1 garlic clove, crushed
- 1 15oz can garbanzo beans (chickpeas), drained
Preparation
Combine all ingredients in a medium bowl and toss salad well.
Nutritional information
Makes 4 servings, each having 160 calories, 6g protein, 5g fat, 23g carbohydrate, 6g fiber and 470mg sodium.
