Garbanzo Bean Salad

Recipe from The Nutrition Action Healthletter, September, 2001.

Ingredients

  • 2 16oz can of garbanzo beans (chickpeas), drained and rinsed
  • 1/3 cup plus 2 Tbsp fresh cilantro, chopped
  • 1 4oz can chopped mild green chilies
  • 1/4 cup plan non fat yogurt
  • 1/4 cup chopped onion
  • 2 Tbsp olive oil
  • 3 garlic cloves, chopped
  • 1-1/2 tsp ground coriander
  • 1 tsp fresh lemon juice
  • 1/3 tsp turmeric

Preparation

Combine all of the ingredients in a medium bowl. Season to taste with salt and pepper. Can be made up to six hours ahead.

Nutritional information

Makes 6 servings, each having 200 calories, 7g protein, 8g fat, 27g carbohydrate, 9g fiber, 400mg sodium.
