Curried Chicken Breasts

Recipe adapted from Low on the Go by Terri Petersen.
Note: requires advanced preparation, chicken must marinate for at least 30 minutes before baking.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1/2 cup plain, non-fat yogurt
- 3 Tablespoons lemon juice
- 1 Tablespoon low-sodium sauce
- 2 teaspoons curry powder
Preparation
- Preheat oven to 375 degrees F.
- Combine yogurt, lemon juice, soy sauce and curry.
- Pour over chicken and let sit at room termperature 30 minutes or in refridgerator for several hours.
- Bake for 40 minutes or until chicken turns white.

Serves 6.
