Curried Chicken Breasts

Recipe adapted from Low on the Go by Terri Petersen.

Note: requires advanced preparation, chicken must marinate for at least 30 minutes before baking.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1/2 cup plain, non-fat yogurt
  • 3 Tablespoons lemon juice
  • 1 Tablespoon low-sodium sauce
  • 2 teaspoons curry powder

Preparation

  1. Preheat oven to 375 degrees F.
  2. Combine yogurt, lemon juice, soy sauce and curry.
  3. Pour over chicken and let sit at room termperature 30 minutes or in refridgerator for several hours.
  4. Bake for 40 minutes or until chicken turns white.

Serves 6.
